Cooking a 3 bird roast
Pre-heat your oven to 190 °C (180°C fan assisted) roast at 20 mins per lb +20 mins. A typical 3 bird roast will weigh around 5lbs and will take 2 hours to cook. Loosely cover with foil and remove the foil 20 mins before the end of the cooking time. Baste with the pan juices.
If you are using a meat thermometer the minimum core temperature should be 70°C.
Allow to rest for 20 minutes and carve. With no bones to negotiate this is easy to carve and certain to WOW your guests.
For a 10lb roast increase the cooking time to about 3hours 40 minutes and leave to rest for around 30 to 40 minutes.
